- Heat the grill on medium-high. Lightly oil the grates using canola oil. Mix the olive oil, chile pepper, lime zest, and shallot in a bowl. Season with pepper and salt.
- Grill the corn with occasional turning for 3 to 5 minutes. Then grill the lime, cut side downward, for 1 to 2 minutes.
